Spuma di Mortadella

The following quantities will serve 6 people:


Ingredients
- 300g of mortadella
- 100g of fresh ricotta cheese
- 1 tablespoon of Parmigiano Reggiano
- 1 tablespoon of double cream


Instructions

  • Finely dice the mortadella
  • Add the ricotta and the parmigiano
  • Stir until you get a soft mixture
  • Add the double cream and continue to stir until it’s fluffy
  • Use it for crostini or bruschette
