Caponata di Melanzane
Our Cooking Courses in Sicily are a week long and are brimming with things to do, see and eat! Caponata di Melanzane is one of those dishes that you'll get to enjoy. It's a Sicilian dish that is a cross between a relish and a cooked vegetable salad. The following quantites will serve 4 people:
Ingredient
- 4 medium Aubergines
- 2 medium Onions
- 100g Cappers
- 30g Sultans
- 2 Celery
- 1 bunch of fresh Mint
- 2 fresh Tomatoes
- 150g Green Olives without stones
- 1 glass of Vinegar (white)
- 5 spoons of Sugar
- Extra Virgin Olive Oil
- Salt
- Black Pepper
Instructions
- Cut the aubergines in big pieces and put them in a colander with a little bit of salt
- Let them sit for an hour: the aubergines will loose their bitter water
- Meanwhile cut the 2 onions, the celery and the olives, cappers and sultans, into fine slices and fry gently in extra virgin olive oil
- Once browned, add the 2 fresh peeled tomatoes
- Allow this sauce to cook for 15 minutes
- While the sauce cooks fry the pieces of aubergines in a generous amount of olive oil then add them to the sauce
- Add in the vinegar and the sugar and allow to cook for a few more minutes
- Finally, add some fresh mint leaves
- Allow it to cool and then serve
