Carpaccio

Ingredients
- 8 slices of Bresaola (1-2 per person) – use very thinly sliced fillet of beef if bresaola is not available
- Lemon Juice
- Extra Virgin Olive Oil
- 1 packet Wild Rocket
- Grated or shaved Parmesan Cheese
- Salt and freshly ground Black Pepper
Instructions
- Arrange the slices of bresaola in a single layer on a serving platter
- Sprinkle with olive oil and lemon juice
- Cover with cling film and place in refrigerator until required
- When serving remove cover, season with salt and pepper, sprinkle over the rocket leaves, coarsely chopped, add a little more olive oil and lemon juice and garnish with the parmesan
To Serve
Serve with some Italian bread
