The Flavours recipe for cooking holidays combines taking you to stay in amazing private villas in some of the most beautiful areas of Italy, learning various Italian dishes from some of the best local cooks and having great fun exploring the local area.

Umbria was one of the first areas to be touted 'the new Tuscany,' however, this postcard-pretty region doesn't need to piggyback on its high profile neighbour.  Often called 'the green heart of Italy,' its lush, forested hills are sprinkled with castles, watchtowers and little towns.  Highlights of this understated area include Ovieto with its gloriously extravagant Gothic cathedral and the tiny Castellucio, high inthe Sibillini mountains and surrounded by lentil fields and wildflowers.

Umbria is landlocked so the emphasis here is on pastas and meats and good hearty peasant fare, although an abundance of truffles gives it a gourmet edge.  Black truffles from the hills areound Nocia and Spoleto are grated over meat and pasta dishes.  Porchetta is another local speciality: tender roast pork stuffed with rosemary and sage, while the chocolate from Perugia is world famous.
