| With this recipe you can make lasagne, ravioli, tagliatelle or any shape you like and the following quantities will serve 4
Ingredients - 200 grams flour 00 - 2 eggs - Salt
Instructions - Make a well in the flour
- Add in beaten eggs with a pinch salt
- Mix together to form adough, if it's too soft then add more flour, or if it's too hard then add more water
- Space it into a ball and leave rest for 10 minutes
- Roll out and use as necessary
A Tip from Simone, one of our Chiefs "Your hands show you what to do : 'muddy' fingers mean that the pasta wants more flour. Don’t worry if you feel at the beginning that your fingers are “sticky”: when the pasta will be done, they appear clean and dry. The hands help you: if you feel the pasta too dry, put your fingers in water and continue working. Your sight is important too: pasta has to have same colour and a beautiful “skin”. And finally don’t forget…love, passion and strength…Now you just have to…experiment!
