Ingredients
- 1 Aubergine
- 2 Peppers
- 2 Onions
- 3 Courgettes
- Olive Oil to fry
- Salt & Pepper


Instructions

  • Chop all the vegetables into cubes
  • Gently fry the onion in olive oil till soft
  • Then add the peppers, courgettes and at the end the aubergines
  • Season with salt and pepper
  • Cook for approx 10-15 minutes over a low heat
