Pasta Fresca agli Spinaci (Fresh Spinach Pasta)


The following will serve 4

Ingredients
- 200g Flour 00
- 2 Eggs
- 100g cooked chopped Spinach
- Salt


Instructions

  • Make a “well” in the flour
  • Add the beaten eggs to the well and mix together with a pinch of salt
  • Add the chopped spinach to the mixture and mix until dough
  • If the dough is too soft add some more flour
  • Make a ball with the dough and leave the dough rest for 15 minutes
  • Roll out and use as required

Once you have prepared your dough you can cut it into any pasta shape that you want. And to change the colour of the pasta you can just add different ingredients instead of the spinach. Why not try tomatoes for red pasta, octopus ink will give you black pasta and grated carrots will produce orange pasta.
