Polpettone - A Three Meat Meatloaf

The following quantites will serve 5:


Ingredients
- 300g minced Chicken
- 300g minced Pork
- 300g minced Turkey
- 2 slices of White Bread dipped in milk
- 2 Eggs
- 3 glasses of White Wine
- 2 Carrots (finely chopped)
- 1 white Onion (finely chopped)
- 1 big Celery (finely chopped)
- Rosemary (finely chopped), salt, pepper


Instructions - The Easy Method

  • Mix together the three meats with the bread, the eggs and the rosemary, salt and pepper
  • Roll it till you get a pipe 19cm diameter
  • In a large pan lightly fry your “soffritto” made of onions, carrots and the celery
  • Put the meat-roll on the pan and add the wine
  • Cover the pan with a lid and cook on a medium/low heat for 90 minutes
  • When done let the meat cool then remove it from the pan and slice
  • Mix the bed of vegetables and use them to dress the meat when serving


Instructions - The More Difficult Method

  • Mix the minced turkey with one egg, one slice of bread plus the herbs salt and pepper
  • Mix the minced chicken and pork separately with one egg, one slice of bread plus the herbs salt and pepper
  • Roll the mixed pork and chicken till you get a roll 8cm diameter Enwrap the roll with the mixed turkey meat so it looks like two pipes on into the other
  • Proceed as above


To Serve
Accompany with a fruity white wine and a raw fennel salad
