Pollo alle Olive (Chicken with Olives)

The following recipe with serve 4:


Ingredients
- 1 Kg of Chicken Pieces
- 10 small Onions
- Green and Black olives
- Vegetable stock with some drops of extra virgin olive oil
- Extra virgin olive oil
- Salt and Pepper
- White Wine (optional)


Instructions

  • Clean the chicken and take off the skin
  • Clean the little onions and cut out the little roots. Cut the white part of onion about 3 – 4 millimetres
  • Remove stones/pitts from the olives
  • Heat up the broth
  • On the stove, in a pan put 1/8 inch of oil and onions. Sautè the onion until they are soft and golden. Add the stock, pinch of salt and black pepper and cook over medium heat for few minutes
  • Increase the heat, add chicken pieces and continue to cook. Add olives and mix, add a spoon of broth, bring to a boil, reduce the heat, cover for 20 minutes
  • Stir from time to time, add stock as required to prevent it from drying out
  • End of cookery, grate pepper, pinch of salt
