A dessert made from the famous Amaretti biscuits, called semifreddo as it is half way between a cake and an ice cream. Surprise your friends with a chic pudding. Ingredients
- 3 Eggs
- 3 tablespoons of Sugar
- 50g Dark Chocolate (grated)
- 100g Amaretti Biscuits (crushed)
- 250g Fresh Cream (remember in Italy we have only one kind of cream)
Instructions
- Separate yolks from whites
- Whip whites until you get a “snow” consistency
- Whip the cream until you get a “snow” consistency
- Mix the yolks together with the sugar, add the cream, mix gently, then add the whites and the grated chocolate and very gently mix all together (circular movements upwards)
- Crush the amaretti biscuits, not too fine
- Pour half the amaretti into the mixture, put the other half on the bottom of the cups you’ll use to serve the Semifreddo
- Pour the mixture on each cup, decorate with a biscuit on the top
- Leave the semifreddo cups in the fridge for at least 2 hours
To Serve
This is a spring/summer dessert and is best accompanied with some Amaretto di Saronno liqueur
