Staccietella


Stracciatella is a light soup made with homemade broth, eggs, and cheese...it's very delicious! This recipe is featured on our Bologna Cookery Holidays as well as being on the menu at our Cooking School in Tuscany Italy. Ingredients:
- Meat or Vegetable Stock (If possible, don't use stock cubes)
- 2 Eggs
- 150g grated Parmesan Cheese
- Oregano, Salt and Pepper to taste


Instructions

  • Bring the stock to the boil and add salt, pepper and oregano to taste
  • Whisk the eggs and cheese together and add to the boiling stock
  • Stir and let cook for 5 minutes
  • Allow to cook for a further minute without stirring - the eggs will rise to the top of the pot
  • Turn off the heat and stir briskly before serving


To Serve
Serve a portion of the stock with some egg mixture in each bowl. Serve with fresh bread.
