Tacchino Ripieno

Tacchino Ripieno is Turkey Stuffed with Apple and Chestnut, best served during the Autumn months. This recipe is featured on our Puglia Cookery Holiday. The following quantites will serve five.


Ingredients
- 800g Turkey Breast
- 200g of Boiled and Peeled Chestnuts
- 1 Green Apple
- Sage, Juniper seeds, Salt, Cointreau
- 3/4 litres of Chicken Stock


Instructions

  • Process the chestnuts together with the juniper, the liqueur and some salt
  • Peel the apple and cut it in very thin slices
  • Add the apple to the mixture and mix all together
  • Stuff the turkey breast with the mixture and use some string to tie it up
  • In a sauce pan, heat 5 tablespoons of oil with some sage
  • Put the turkey in and seal the meat all around at a high heat
  • Turn the heat to a medium temperature and add the stock
  • Cook till the meat is ready


To Serve
Accompany with a Rosè wine, this will exalt the sweetness of the stuffing
