Also at Monte del Re we have Mario, who runs his fantastic restaurant, Scaccomatto in the heart of Bologna, and is passionate about his local, Italian cuisine. Mario has been delighting guests on our cookery holidays in Bologna since we started and his strawberry ice-cream with balsamic vinegar drizzle is a legend! On the menu may be anything from stuffed guinea fowl to seared sea bass with aubergine and basil infusion. Although he is originally from the south of Italy he’s a wizard at traditional Bolognese dishes and has adopted the fantastic local produce of the region as if he was born to it!
