Cook like a local – Tuscan Wild Boar Ragu

Delicious Tagliatelle served with wild boar ragu
  • Serves: 4
  • Preparation Time: 10 mins
  • Cooking Time: 20 mins

Ingredients:

  • 500g boar meat
  • 150g cherry tomatoes (diced)
  • Half a red onion
  • 1 celery sticks
  • 1 carrot
  • parsley
  • 1 large garlic cloves
  • 2 leaves of sage
  • 1 bay leaf
  • Sprig of Rosemary
  • Extra virgin olive oil
  • Salt and Pepper
  • 500ml of red wine

Instructions:

  1. Dice the boar meat into pieces. Chop finely the carrot, celery, onion, garlic and parsley.

  2. Add the boar meat to a pan with a good glug of olive oil. Once the meat is browned all over add the diced vegetables.

  3. Cook on a medium flame, stir every so often and after 10 minutes add the red wine to deglaze the pan.

  4. Once the wine is evaporated, you can add salt and pepper to taste and the tomatoes. Add a little water and cook on a low heat for at least an hour, add a little more water during cooking if needed.

  5. Once the sauce is reduced serve with some authentic Italian pasta!
